Vegan & Gluten Free Banana Nut Scones




Just recently I have decided to take my health into my own hands and change the way I eat. Since I don't have hyperthyroidism or T3 toxicity severe enough to treat I have to decide to test out Hippocrates quote:


“Let food be thy medicine and medicine be thy food.” My friend and health aficionado, Marie invited me to a study she was leading called Read Pray Move by Christa Cordova (click to check it out!) along side Christa the author of the Bible Study herself. Christa challenges us for 40 days to give up Gluten, Dairy, Sweets, Caffeine, and Processed food in order to promote health and kick diseases! It has been beyond difficult but it has really opened me up to trying new things that are actually very healthy for you! Its a Bible Study that challenges our self control, and places glorifying God through our bodies front and center. It isn't a plan to lose weight, to be honest I hope to gain weight, but it is a plan to encourage us to eat delicious and natural food so that we may reach our optimum health. I think the hardest thing for this plan is resisting my sweets cravings, they get intense in the middle of the week. Oh it has been tough but I made a recipe that really really helps! In order to curb my sweets cravings I adapted this Vegan Banana Nut Scones to be gluten free and sugar free recipe! It is SOOO good! I can't even tell that its vegan, gluten AND sugar free!! Enjoy!!

Ingredients: (makes 10 scones)


  1. 2 cups of Almond Flour

  2. 3/4 cup of chopped almonds

  3. 1/2 teaspoon salt

  4. 1 tablespoon Baking Powder

  5. 1 1/4 teaspoon cinnamon

  6. 1/2 teaspoon ground ginger

  7. 1/3 cup Coconut Oil

  8. 4 Medium Bananas (3 Mashed, 1 Sliced to top scones)

  9. 1/2 teaspoon Vanilla Extract

  10. 1/4 cup of Almond Milk

  11. 2 Tablespoon Maple Syrup


Instructions:


1. Preheat Oven to 425 Degrees.

2. Mash Up 2 Bananas.

3. In a large bowl combine all dry ingredients.




4. Stir in the mashed bananas with the dry ingredients.

5. Cut in the Coconut Oil, and incorporate well.

6. Stir in the wet ingredients.

7. Spoon into Scone Mold or Muffin Pan.


Do not worry if it doesn't form a dough ball, it will be the consistency of Banana bread instead of actual scone dough.




8. Top with Banana Slices.

9. Bake in the oven for 16-20 minutes depending on your oven.
